Croissant Melt Sandwiches

Our “Flagship” product - a favorite wherever we go.

A fresh, large croissant, split and both halves served open faced with our own garlic herb cream cheese, Oregon Bay shrimp or Dungeness crab (or both), with real Tillamook cheddar & jack cheeses, then toasted under the broiler.

Occasionally also offered in albacore tuna and smoked salmon versions.

Classic Cocktails

A full quarter-pound or more (before sauce) of Oregon Bay shrimp or Dungeness crab, topped with our own tangy cocktail sauce and garnished with a wedge of lemon. Prawns, too - with a side of cocktail sauce for dipping. We even have a “Combo” cocktail - half shrimp & half crab - for those who can't make up their minds.

We can also create other varieties of cocktail sauce for special or “themed” events - our most famous is our cranberry cocktail sauce for cranberry festivals - it's won rave reviews!.

Quesadillas

A 10" flour tortilla, filled with cheeses and a sprinkling of scallions, with Oregon Bay shrimp, Dungeness crab, both shrimp and crab, or mesquite smoked chicken (plain cheese is available as well, as are occasional offerings of grilled albacore tuna and smoked salmon versions) then we grill it to perfection. Our own, handmade fresh pico de gallo or salsa verde is available on the side.

Shrimp Kebobs

Large Gulf prawns alternated on a skewer with pineapple chunks, then sauced with either our own teriyaki glaze, sweet & sour sauce, or our own spicy-garlic BBQ sauce. One of our biggest sellers, we've gone through as many as 500 lbs of these in one two-day show.

Bacon Cheddar Chowder (plain, or with shrimp or crab)

Our special chowder, made with baked potatoes and bacon, we add the cheddar just before serving so that it stays smooth and creamy. You can add bay shrimp or dungeness crab as well.

Shrimp or Crab Pannini

Served on toasted whole wheat or sourdough bread with a parmesan cheese crust, our Oregon Bay shrimp or Dungeness crab pannini can be enjoyed with either Tillamook Cheddar or Provolone cheese, and the fire roasted red peppers, sweet Bermuda onions, black olives, and fresh basil stuffed in them makes these an opulent (and delicious) sandwich

Chicken-On-A-Stick

For those non-seafood lovers out there, we offer these massively popular skewers of over 1/3 lb of boneless, skinless chicken, cooked to tender perfection with mesquite, then sauced with either our own teriyaki glaze, sweet & sour sauce, or our spicy-garlic BBQ sauce. We sell literally hundreds of pounds of these at an average show,

Cajun “Pulled-Pork” Sandwich

We rub selected pork cuts with cajun spices and herbs, then alder smoke them for a full 6 hours, then slow cook them for yet another 6 hours until they are literally falling apart. We “pull” it apart, then add our own authentic tangy cajun BBQ sauce (never fear - contrary to popular misconceptions, “cajun” does not necessarily mean “hot & spicy”). Pile it on a toasted bun and add more sauce (and onions if you like 'em), and you've got our fabulous cajun “pulled-pork” sandwich.

Garlic-Herb 5-Cheese Bread

A fresh hoagie roll, topped with our own garlic herb cream cheese mix, parmesan, real Tillamook cheddar, mozzarella & provolone cheeses, then toasted under the broiler.

Hand-Squeezed Lemonades & Limeades

We squeeze the lemons and limes ourselves & add just the right amount of sugar (we use the same recipe our Grandmother used to follow) to make a properly tart/sweet taste delight. A dollop of real Oregon strawberries (or maybe even marionberrries) with their own slightly sweetened juice adds an optional scrumptious flavor addition.

We also have other varieties of lemonade available for special or “themed” events - such as cranberry, blackberry, raspberry,, etc.

Fajitas

Large gulf prawns or mesquite smoked chicken, with a flavorful blend of spices, onions and peppers, three cheeses and optional sour cream, all wrapped up in a grilled tortilla. Our own, handmade fresh pico de gallo or salsa verde is available on the side, of course.

Crab & Shrimp Cakes

Oregon Bay Shrimp or Dungeness crab, seasoned bread crumbs, eggs, green onions and seasonings, lightly fried and served with a side of cocktail sauce.

Classic Cocktail Sandwich

A split croissant. lightly toasted, slathered with our own homemade cocktail sauce, and stuffed with your choice of Dungeness Crab, Oregon Bay Shrimp, or a combination of both. It makes a classic cocktail into "finger food"!

Smoked Salmon Plate

Our own smoked salmon - marinated in teriyaki, brown sugar, rum & spices, then smoked with cherry and/or alder woods to a moist perfecton. Served with cubes of Tillamook cheddar, ColbJack & Pepper Jack cheeses.. Great for walk-around snacking.

Spicy “Buffalo” Shrimp

We've taken the classic Buffalo Wings loved for decades and given it a seafood twist - we drench large cooked gulf prawns in a super spicy “Buffalo” sauce and serve it with the classic Buffalo Wings dipping sauce - blue cheese dressing. Not for the faint-of-taste-buds.

“California” Sushi Rolls

The classic “California” sushi roll uses imitation crab meat - you know, that flavored and textured white fish that doesn't really look, smell, or taste anything like real crab? NOT here! We use sweet, REAL Dungeness crab, (or Oregon Bay shrimp, or fresh (raw) albacore tuna), with avocado, cucumber, and sesame seeds, rolled in sushi rice and wrapped in toasted nori. Served with wasabi (hot Japanese horseradish), our own pickled ginger (yes, we even pickle it ourselves), and, of course, soy sauce.

Louis Salads

What's a “Louis” Salad? Line a bowl with fresh leaf lettuce, add some more shredded head lettuce, then top with Oregon Bay shrimp or Dungeness crab. Garnish with wedges of hard-boiled egg and ripe juicy tomato. Top the whole thing with our own homemade Louis dressing (it is a “Louis” salad, after all - we don't “get by” with thousand-island dressing) and you've got our delicious, and classic, Louis salad.

Provoleta

Provoleta is a very popular and famous grilled cheese dish from Argentina. Thick slabs of provolone cheese are marinated in olive oil, oregano and crushed red peppers, then grilled on a very hot grill until the cheese is heated through and begins to melt. Served with toasted bread slices for smearing the cheese onto, and drizzled with chimichurri sauce (which is made from Italian parsley, garlic, aji molido, olive & canola oils, crushed red chilies, and salt - a sort of Argentinian “pesto”). This one's spicy... better have one of our lemonades to go with it!

Shredded Chicken Pita Sandwich

Tender chicken, first grilled with mesquite, then slow oven roasted until it's falling apart .We pile it on a grilled flatbread (pita) with shredded onions, then we add your choice of or famous Cajun BBQ sauce, Spicy Honey-Garlic BBQ sauce, or Honey-Teriyaki sauce.

Philly “Cheese Steak” Sandwich

Paper thin slices of sirloin steak, grilled with onions and mushrooms, topped with melted provolone cheese, all piled in a toasted hoagie roll. It’s a classic!

Chicken Sausage On-a-Stick

We make our own sausages from start to finish. Each is a full 1/4 lb of chicken, with only 3.5 grams of fat and approximately 100 calories (some slightly more due to other ingredients such as cheeses). We have a variety of chicken sausages, from mild to hot italian, sage & sun dried tomato, and ginger teriyaki, to fresh basil & parmesan, bratwurst, cajun, and garlic, herb & black pepper, chorizo, and a range of others. Not all varieties are available at every event.
